Unicorn Cakesicle / Popsicle Tutorial

Over the past few years unicorn cakes have been everywhere, and I really can’t see this trend fading anytime soon. I mean who doesn’t love pastel shades mixed with a little bit of unicorn magic. I thought it was probably about time I featured some unicorn inspired cakes on my website, and when thinking about what to make I knew that some unicorn cakesicles would be perfect.

Now if you don’t know what a cakesicle is, it’s a new take on the classic cake pop. You may have seen these on your Pinterest boards or when scrolling through Instragram and you would be forgiven if you thought they were ice lollies. Cakesicles are made using a lolly mould to get that classic shape, but they are filled with yummy cake and covered in a layer of chocolate or candy melts. They then have a nice area to decorate in your chosen theme… mine being unicorns!

So for for this weeks video tutorial I am going to show you exactly how I made mine, from filling the lolly trays with candy melts, making the cake mixture for the inside and decorating the front with a mini unicorn horn, ears and tiny flowers.

I just love how pretty these cakesicles are, and they would be perfect if you are planning a unicorn inspired party or celebration, and they are just a little bit different from cupcakes. For the actual cakesicles I used a mini silicone lolly mould which had a size of 38mm x 72mm. The lolly moulds are available in all different shapes and different sizes, but I though the mini size would be perfect as a bite sized treat.

When making the cakesicles I chose to add the candy melts to the mould itself rather than filling these with the cake mixture and dipping these into the candy melts after. The reason that I chose this method was because if anyone has ever made cake pops they will know that to get candy melts to a consistency where you are able to dip cake into them and allow it to drip off giving a smooth coating, you really need to thin the candy melts out with oil to make it smoother. By adding the candy melts directly to the mould you don’t have to add any additional oil and the finished shape is really smooth and everyone will be exactly the same.

  3. Hi! I love this tutorial and I like to try this. I was checking where to find the Sugarflair Gold Dusts but I can’t find one. Can I use Wilton Pearl Dust in Gold instead?

    I’ve tried this technique and it looks way better than dipping. When I try remove the cakesicle from the mould, the chocolate coating cracks after while. I’m not sure why. Any suggestions on how to fix please?

    1. Hi, I am so excited you are using the tutorial to make them. You can definitely make the fondant decorations in advance. I usually keep them in a plastic container with the lid off or a card board box. You don’t want them to get hot. They keep fine, so there is no specific time you need to make them, they will be fine weeks in advance.
