Ice Cream Cake Tutorial (100% Cake!!)

Choosing between ice cream and cake is always a hard decision for me. Now I love cake, but when the weather is nice there is nothing better than a bowl of ice cream. Ok, the truth is it doesn’t need to be hot for me to enjoy a bowl of ice cream, whatever the weather ice cream is a good choice, lol.

So for this weeks video tutorial I thought I would combine these 2 themes and create an ice cream sundae cake, entirely out of cake! So here is this weeks video tutorial showing how I made this tub of ice cream with lots of different flavour scoops…

This was such a fun cake to make, from the tub with the sprinkles made to look like they are printed on, giving the impression it came right out of an ice cream shop to the different colour ice cream scoops, and not forgetting the finishing touches which include the wafer, the cherry and my favourite the little spoon to make it look as close to the real thing as I could.

The cake is made entirely out of a 2 layer 6 inch vanilla sponge cake. I used the off cuts that I had from levelling off the cake and carving the sides to make the domes for the ice cream scoops. I mixed the crumbled cake with a few heaped table spoons of vanilla buttercream and used this to create large balls which I cut in half to give me the shape. The mixture was exactly the same as it would be if you are making some yummy cake pops. I then covered the whole thing in a layer of chocolate ganache and finished it all off with rolled fondant / icing to bring the cake to life.
