One thing that I love to make and something I haven’t made for a while on the channel are cakesicles. Cakesicles are great at parties or to add into treat boxes as gifts. If you’re new to making cakesicles and wondering what they are, they are sponge cake mixed with buttercream and coated in a layer of candy melts or chocolate, in the shape of a lolly. These are one of my favourite little treats, apart from cupcakes of course!
So this week I’m showing you how you can make these cute little woodland fox cakesicles.

For the caksicles I used a mini lolly mould. The gaps in the mould are around 4 x 7cm. The shape lends itself so well to creating animal designs. I then used white candy melts, and coloured some of these orange for the top of the head. I then added the detail on the front with coloured fondant, this included the ears, nose, eyes and some sweet little roses on the top.
As I mentioned above they were then filled with vanilla cake which had been combined with some vanilla buttercream to make the unmistakable cake pop texture. You could also use ganache or Nutella, you just want something that will help bind your crumpled sponge cake together for when you push it into your mould.
I love how cute these fox cakesicles look. These would be perfect for a woodland themed party.
Working with Candy Melts
For these fox cakesicles I used candy melts for the coating on the outside, but you could also use chocolate too. The thing that I love about candy melts is they are so easy to melt and they don’t need to be tempered.
Place them in a microwaveable bowl and pop then into your microwave for around 30 seconds. Give them a stir and keep popping them in for bursts of 10 seconds until almost all of your candy melt buttons have melted. Then take them out and keep stirring. By removing them before the last of the buttons have melted this helps not to overheat them.
I then used the oil based colour by Colour Mill to create the orange for my foxes head.
