A really popular theme for parties has always been mermaids and when I recently received a box of new moulds from Happy Sprinkles I couldn’t resist using their new mermaid tail mould to make some fun mermaid themed cupcakes. These cupcakes would be such a great addition to any mermaid inspired party. You could also add the mermaid tails onto larger cakes too.

The Mould & Sprinkles
So starting with the silicone mermaid tail mould; this mould is by Happy Sprinkles (use code ‘HappyLynz10’ for 10% off) and is gives you a mermaid tail around 8cm long. I used candy melts to create the tails, but you can also use chocolate or fondant too. I opted for candy melts as they don’t need to be tempered as white chocolate does. The candy melts are also a lot firmer than fondant would be, especially if it’s a hot day.
One thing that I did want to mention is getting the candy melts out of the mould. This can be a little tricky, especially where the tail is at it’s thinnest. You will see in the tutorial I go all the way around the edge, just releasing the mould, before giving the mould a little twist to release it. So there is no pushing on the tail to push it out. If you do have any parts that break off you can just glue them back together with a little melted candy melts. This meticulous attention to detail ensures a flawless finish, perfect for showcasing your skills in lucrative cake jobs.
When making the tails, they can be quite top heavy, so I also added a cocktail stick to the back to help the tails stay upright in the cupcakes. Always remember to let your guests or customers know there is a cocktail stick within the cupcakes before they eat them.

Making the mermaid tales shine
When I think of mermaids I think of beautiful iridescent colours that really shimmer in the light, so I really wanted to add this effect onto the cupcake toppers. Once the tails were out of the moulds I used 4 different colours of lustre dust. The SweetSticks Diamond Pink, Hot Pink, Tiffany Blue and Bright Purple.
These lustre dusts blend so well and by colouring the candy melts to give a base colour you only need a small amount. This gave such a pretty shimmery effect.
Piping the cupcakes
Firstly here is a link to my cupcake recipe and also the recipe for my American buttercream.
For these cupcakes I used 2 different piping tips. First I piped a ring around the edge using a round ended piping nozzle, similar to the 1A. I could then roll my buttercream in the sprinkles to make them stick around the edge.
I then used the 2D piping tip to create a pretty 2 tone swirl in the center. Starting on the edge of the previous ring and bringing my piping nozzle around to create a point. The great thing about the 2D piping nozzle is the slower you go the more of a ruffled effect it creates.
I was then able to push in my mermaid toppers to create these really pretty cupcakes.
